Cedar Plank Trout

Tonight I made a Cedar Plank Trout for my wife and I. I have never used a cedar plank before. Boy it added a nice flavor to the trout. The trout was rub down with Steve Raichlen's Island Spice Rub and some brown sugar.

Neil, I soaked the plank for 2 hrs. It soak up a lot of water. I saved the plank, because next time I am going to add to the smoker.

We had steelhead on a cedar plank last week (thanks to my son-in-law, Ray). I didn't photo the cook but it was absolutely excellent! The local Krogers carries Salmon and Steelhead and Costco has absolutely the nicest seafood imaginable. We are truly blessed.
