A lot going on, hopefully not to pic heavy. Willing to listen to all suggestions to improve post. First, set up OTS for long cook.

Seasoned the pork butt with garlic powder, salt and pepper. Then smoked for two hours at 250-260 with Apple wood chunks.

In the meantime Kim made some salsa. Tomato, onion, jalapeño, cilantro, garlic, lime juice, salt.

Finished salsa. Very tasty.

Took pork off at two hours and foiled with sauce.

Put foiled pork on the grill and cooked in the 350-375 range.

Pulled off the grill after 2.5 hours. Cut a hole in the foil and drained juices into a CI skillet

Cut up the pork and put back on the grill to fry

In the meantime Kim made some guacamole. Avocado, onion, jalapeño, tomato, garlic, salt, lime juice.

Robert - excellent post and pics! Did you get any plated pics? I'm going to be making some pork carnitas very soon, and I'll use your pics as my guide.

Finally plated. The tacos turned out very good. Tony R's refried beans were outstanding. Plated pic is a little weak, snapped,it on the run.

Glad to hear you liked the bean recipe Robert. Maybe next time don't add the sauce. But do everything else the same way.
 
That looks like a great meal.. Great dedication and a great result.

My wife was reading over my shoulder and said "Make That!"

WoW! That looks delicious. Did you cook the butt until it was ready to be pulled or a little earlier since you put it in the skillet with the sauce.
 
Perfect cook and perfect dinner Robert and you have some great help there also. Nicely done to you and your helper.
