Carne Asada Tacos

Barb had her last day of radiation treatment on Friday and had virtually had no side effects except being a little tired in the evening. Grueling four weeks of going Monday through Friday, she was glad it was over.
So to celebrate we decided to make some carne asada tacos.
Took out a flank steak and marinated it for about six hours in a citrus based marinade.
Wind still blowing like crazy here so the E320 got the call, it’s a little more protected being on the covered patio next to the house.
I have to say I found my taco marinade, great citrus flavor with hints of south of the border spices.
We both really liked it.

Have a great week.

Those look awesome, Rich. Congrats to Barb on finishing up treatment and wishes for continued speedy, easy recovery.

Weather not cooperating here either. Was hoping to throw a spatchcock chicken on in about 30 minutes, but severe thunderstorms are just arriving. Charcoal is definitely out, just need to decide what to do - either Genesis or oven.

I hear you, we have had winds in the 30-45mph almost every day for two months. Really getting old.

Rich, those tacos look pretty awesome and I am salivating imagining eating them!

I'm glad you and Barb can have a little respite from your situation. I wish you two the best.
