So we had some friends over tonight, and originally I had planned some tacos but had a change of heart mid week. So.... I decided to go with a mixup of Frito Pie! What better way to celebrate the Canada Day long weekend, then by a Texas/New Mexico dish
...
So to make my chilli first I decided to use an adapted version of a Mole rub that I found in the rubs/sauces board. I did write down what I added somewhere but it's gone missing in the entertainment tonight.
Here's the rub all ready to go on the bird that'll be the basis for a white chilli!
All dressed and ready for the smoke
Tossed her out on Barbie with a few chunks of apple wood for a bit of a smoky bath
After an hour and a half at 350, I tossed on some jalapenos to char up and adjusted the position to finish off the cook.. That's some crazy colour from the rub I will say.
Bird is done, and smelled pretty awesome
Time to get cracking on the chilli. Recipe included some canned chillis, and my charred jalapenos, some white beans and corn, and the chopped up smoked chicken.

Made up a roux and added some cream and stock, then the pile of ingredients to mellow out and meld together.
Plated up with some canadian version of frito's and some sharp cheddar and green onions... Oh boy was that a tasty dish.
Had a few wobbly's shared with good friends and finished the night off with an ice cream cake and a locally made tiramisu which I totally forgot to take images of.. but that's life!
