Burnt ends for chili

My office has their chili cook off coming up and I want to do one with burnt ends. The problem is the cook off is on a Friday. I can BBQ the burnt ends three ways...

1) Cook them the weekend before and freeze them until I make the chili on Thursday night.
2) Cook them the weekend before and keep them in the fridge until I make the chili Thursday night.
3) Cook them overnight on tues or wednesday night and make the chili on Thursday night.

Guess my question is, can i freeze them for a few days or will that kill the flavor? I'd much rather make them the weekend before instead of trying to cook them overnight during the week.

Any thoughts?

Go ahead & freeze them. They will be fine.
You will probably smoke the competition!

Be sure to post pics! It'd probably be a good idea to freeze in a single (or a thin) layer so they'll defrost quicker and easier.
 
I like to add cubed up point of the brisket about an hour or so before serving that way it stays nice and chunky! brisket chili is the best!
