Brisket & Pork Shoulder


 
Got up at 3:00 AM & started my cook. Pork Butt on the bottom rack & brisket on the top rack. Cooked over Cherry wood at 225
 
One of the benefits of getting up so early is watching a spectacular sunrise. This is what Babygirl & I watched that morning

Added a vinegar based sauce to add moisture to the meat. Then added some more rub to punch up the flavor

Made 8 bottles of Sauce
2 bottles of vinegar sauce
2 bottles of mild BBQ Sauce
2 bottles of Spicy BBQ Sauce
2 bottles of Carolina Mustard Sauce

I put the 2 bottles of vinegar sauce on the meat. This order was for a client. I really wanted to slice the brisket but it needed to rest 2 hours. Even though cooking Briskets & Pork Shoulders has become mundane & boring for me my client loved both. And that's all that matters. Now I need to cook something for me & Babygirl. Thanks for looking
 
Getting ready for my first competition. Next month Ribs, Chicken, Brisket & Pinto Beans. Be good experience & I may do OK. You never know
