Beautiful brisky Jim! Lay low with that cold and rest up. There will be plenty of time to enjoy it when you're better. At least then you will be able to taste it.

One co-worker's (in fab) wife stopped at Costco today to buy one (a 16 pounder!), their first packer and they don't have a smoker big enough to smoke it.
Actually Wayne, slicing it and storing it for later, in my experiences, is fine. Is it best? I haven't the foggiest.
however....
i did made the BIG mistake of refrigerating it while it was warm... the next day, good luck separating the slices... they stuck together like glue, breaking some of the slices.
I didn't know you could buy brisket of that quality for that price anymore. I gave up on briskest bc they got up to 3.99/pound for Walmart choice in CFL. I'm not a Costco member but need to look into this. Your cook has inspired me
