I found a bunch of certified angus brisket at C&C.. just a few cents more per pound than the select bunch that were nearby.. took the smallest one.. 14.56 lbs.. prepped it and put in in the fridge for the night.
So this is 6 pm the next day.. getting ready for a nice evening of smoking
This is the next morning probably around 7 or 8 oclock after an all night temp of 225 to 240 degrees.
after 16 hours the meat was nearing completion so I prepared some potatos for the performer..
as the potatoes were getting done I tried grilling up some cauliflower steaks.. seasoned up and put on the grill
time for dinner
the brisket was my fourth one and best one to date.. spuds were killer and cauliflower was good. the brisket sat double wrapped in foil and juices and put in the cooler for 3 hours while I made the potatoes.. longest I ever let one sit.. hope you enjoyed the pics.. Dave
