Brand new WSM owner ...

Went and put it together and burned a chimney of coals, just to get a feel for it. Shocked at how long it's been going ... at 325 for three hours straight and no sign of stopping. Now I wish I had prepped something to smoke. :)

Probably going to do something next week ... maybe a chicken or some armadillo eggs. Flippin' through the WSM secrets cookbook for ideas.
 
Welcome Chris! I'm a newbie as well...had mine about 6 weeks now, and have done 9 cooks on it already...including 3 all-nighters with no effort on my part at all. I've smoked meat on a lot of different types of smokers for 35 years...and the past several years was on an offset stick burner. I finally decided I was getting too old to have to work so hard to smoke something to eat. So, I debated between the 22.5 WSM and the XL BGE. And, I am so glad I decided on the WSM...it is an amazing piece of equipment. And, when you can buy 3 - 22.5 WSMs for the price of 1 - XL BGEs, it's even more amazing! Good luck and happy smoking!!
 
Welcome Chris. I've only had my smoker for a couple months and love it. It holds temperature so consistently you don't have to babysit it. I've made some great ribs and chickens on it. Pork butt is next.

Nice thing about the WSM is once you get comfortable with the fact that it WILL maintain temps, you can leave it alone. I had some errands to run the other day (wife was out, not that she'd know what to do in any case) but I set it up, got to temp (after remembering to open the top vent :rolleyes: ), put the ribs on and left for two hours with no one home. Got back, the WSM was still chuggin' away at the temps I wanted.

Sweet unit.
 
As others have said, you will love this thing! Keep us informed of your cooks and your questions. We all like to see what each other is doing, and there is certainly sage advice on this board that you can learn from!
