Bone-in Rib Roast

One of the most amazing pieces of meat I've smoked since owning my 18.5"!! Took about a little over 3 hours at about 325 the whole time. The weather was cold so I had the smoker wrapped with water heater insulation and that helped. Rubbed with olive oil and sea salt/cracked pepper. Well worth the $6.50/pound price!

Dang Tim, this looks awesome. I keep telling myself to fix this. What internal temp did you pull it off at? Like the simple seasoning you used.

I pulled it at 140 and let it set loosly-wrapped with foil for about 20 min. I'm not a big medium-rare to rare guy so I wanted to make sure to have them temp up a bit before I pulled it. I also used 3 chunks of Hickory. Like I said, well worth the money!! Can't wait for leftovers tonight.
 
Tim, nice job on that bone in rib roast. Looks guud! And done just right, not too rare and not too done.

Looks less done than I'd expect for a pull of 140. Beautiful!

If I saw it for $6.50 a pound in Connecticut, I'd buy 100 pounds...
 
I was going to say that would be an excellent price around these parts, beautiful cook Tim. I too am surprised how it looks at 140. I usually go a little more as I like it like yours came out Tim.

Thanks for all the kind comments! This truely was a treat for my family and myself. This will go up there as a "do again"! I couldn't have done it without all the advice I gathered from this site. You stole that at $6.99. I can get boneless for that price in the Atlanta but bone in is always $10 plus. Your cook looks great! Always taste better with the bone IMHO!
