Yep bringing the tacos back...ya I know it was earlier this week and seems everyone move on to chicken and ribs...my two boy have birthdays in march and requested tacos...so that's what we did!
Got my blue OTS cleaned up an was a pretty nice day here in Southeast Alaska! Partly cloudy and 45.. Almost no snow on the ground so got some outside stuff done!
Started up the new blue to clean up some grates!
Once the grates were clean I fired up the performer for wok duty!
Soaked 4 pounds of skirt steak (sliced thin)in beer, lime,orange, EVOO and mojito lime seasoning for 24 hours...then did it all in small batches!
Once each batch was done I put it in a Dutch Oven and used what was left for coals on the OTS for a warmer!
Did a bunch of tortillas.
And served them up with beans and rice, salsa and of course cervesa!
These were perfect and enjoyed by the birthday boys...I think I'd rather grill up the flank steak and cut up into bits later but my lovely wife insisted I do it this way..it works!'
