After getting my late father-in-law's kettle clean and ready to cook, it was time to get her messy for his granddaughter's (my favorite niece in the world) birthday. Got up early (around 4:20 am) and got the kettle smoking.

Got a injected pork shoulder on.

A few hours in I checked it and flipped it.


Once the pork shoulder was done and in the cooler it was time to keep the smoke rolling, a whole chicken for pulled chicken was up next. I followed the below recipe, I added a little apple cider vinegar with my homemade rub with the cup of peach nectar and some hot sauce.

Here it is at the hour mark.

Here it is ready to be pulled.

Pork pulled.

We were hungry so I got a plate before I got a picture of the full spread.

But I came back at the end to get a picture of the whole spread.

And here is a pic of the 8 year old on her new bike.

The kettle preformed wonderful and it was really amazing getting to cook on the kettle he did.
A note on the recipe for the pulled chicken, I highly recommend it. I think that was the best pulled chicken I have ever had. The injection added so much moisture. It had this sweetness of the peach nectar, a the touch of heat, and seasoning and flavor throughout not just on the surface. I feel like I paired it perfectly with pecan and peach wood.
