Birthday Loin Backs

....not my birthday, but my sister's. In honor of her birthday, we had her over for dinner (properly distanced....in the backyard, etc.), and I made us some loin back ribs. These were supposed to be spareribs, but we had to do an Instacart substitution from CostCo. I don't normally cook spares, so I researched my favorite BBQ site (thanks, Chris) to come up with a plan. I decided to go with a straight cook (no foil), at 230F for 4-5 hours. I got everything started around noonish, but firing up the WSM22, with some chunks of hickory, cherry and apple. I seasoned up the ribs with Dizzy Pig Dizzy Dust, and tossed them on the cooker once it was steady at 230F. Everything went pretty well, though the temps got a bit high later in the afternoon (260-280), but I had a bunch of other things going on (chicken sausages, grinding up some pork butt, and bread with a new starter), so I wasn't really paying close attention (in my experience, these pigs are smarter than we give them credit for, so I gave up hovering over the Q a long tim ago.....) I pulled the lid around 4p to check for tenderness, and they weren't progressing nearly as quickly as ~265 would have you believe, so I decided to wrap them for about 45 minutes. After that, I got them back on the WSM to finish, and, again called an audible and sauced them (I usually just serve sauce at the table.) Anyway, dinner time came around, the ribs looked good, so I got them off the grill, sliced them up, and we went to town. And, wouldn't you know it, best loin back ribs I think I've ever cooked! Tender, but with a clean bite at the bone, sauce was good, and a nice smoke flavor. Probably won't be able to recreate the cook, but that's ok, my sister was happy (and so was I!) :)
