I recently had a Birthday and decided to make myself dinner. You always see Jim Lampe puttin limes on his cooks so I decided to see what all the fuss was about.
Started out with a bunch of good spices for the rub on a pork tenderloin. Salt, pepper, cumin, smoked paprika, garlic and onion powder and cilantro and Oh yeah lime slices.

I couldn't find my twine so I just stacked it.

For sides I just kinda went nuts, roasted red peppers, roasted corn, onions and skillet baby red potatoes
