Birthday Dinner Pork Loin

Did this for my Mom's birthday yesterday. Made an herbed bread-n-butter cranberry stuffing:

Used it to stuff the pork loin. Lightly oiled and coated with an herb rub:

On the Performer at 325-350 for 1.5 hours or so (until 140 internal temp):

Everyone enjoyed it. Mom was happy.
 
I was looking at the prep on the pork loin and I thought hmm looks kind of a German dish. Then saw you were from E Ville. Explains it all.

(a side note) without digging up my old post to answer your question about nopales, no, we do not grow them, just saw the diced version at the grocerer and bought a bag... wanted to use them up before they go bad. :) L♥ve nopales!
