Figures the second I start my WSM, the 30+ MPH winds start :(

I actually had to prop the door open to keep a high heat cook....go figure

Brined for 24 hours in 1/2 cup salt and 3/4 cup sugar plus a couple shakes of Soy Sauce

Hope everyone had a great weekend, it was a lousy weekend to watch the Giants, I think I could have been done better watching the ants sneak into the house
 
Chuck you and I have the same luck with the wind. yesterday here it was hot as hell and not a cloud to be seen. I was going to use the SJ to cook our chops, as soon as I stared to light the coals the wind comes roaring in, the sky gets dark and it starts to rain. Had to use the gasser to do the chops under the patio cover.
Great looking birds, you did good!
 
I was wondering if your 4 legged friend got any?
That's Chloe (named after Chloe O'Brian of 24) besides getting away with being on the counters (all be it, the edge) she's spoiled rotten and gets many a treat. All the cats go crazy for chicken, but I have to make sure there's no spice in their pieces or cat yuck will occur, LOL
 
Wow Chuck, looks like Chloe ate a whole chicken! Great job on the birds. Looks delicious. I'll trade you some of this 106 - 110 degree stuff we've been having for some of that coastal wind!
 
Nice bark Chucko! I've been gun shy on firing up the WSM for the last week. We've been having this crazy tropical weather pattern rolling threw and it's causing havoc. 90degrees and so humid. You wake up and take a shower and you never dry off. One minute there is not a cloud in the sky for as far as you can see. The next you look SW and see this...This one had me worried. It came, put a beating on everything and was gone in like 15min.

That was an insane photo Todd. For a former kalifornian who's been converting me to leaving the "golden" state....you've just taken a huge step backwards, LOL

but I will quit complaining about the wind after seeing the wind you deal with :)

Left Illinois because of the winters and tornados moved to California to the earthquakes, smog and traffic, retired in the high country of Arizona to the hurricane winds, forest fires and monsoon rains. It's all good!
 
Chuck, those birds look perfect.! I bet skin was perfectly crispy! At what temp did you cook?
Hi Enrico, how's my vacation place in Italy? :)

My goal was to get crispy skin.............I did not :(

The plan was to cook above 300 degrees, and for the first hour I couldn't even maintain 250. I ended up taking the door and turning it upside down and propping it open to get the heat over 300 degrees. I would say the cook was:

First hour 250ish degrees
Next hour & a half, 300-325 degrees

Besides the wind, I think my drip catch tray was too big and acted as a diffuser. I plan to try it again, only this time when the wind won't suck the air out of my WSM, and with a smaller catch tin.

I did brine these birds, do you think that might have an impact on the skin. From what I've read, it should not have, but getting crispy skin continues to elude me :(

Those wall clouds can be pretty knarley. To tell you the truth, you only half to deal with them a few times a year. KKKalifornia taxes and regulation are delt with day to day;)
 
Nice color on the birds Chuck, I see the kitty cat was looking to get in on the action in one of your pics. And congrats on your Giants beating the Mariners today. How long till football season? :)
