My wife found some top round on sale (I would have preferred skirt, but its all good), so I marinated with chipotle, lime, salt, pepper, oregano, then grilled indirectly. Sliced thin for the tortillas with guacamole, quick pickled cukes, corn with miso-ancho butter, and brussel sprouts. A satisfying dinner.

Excellent looking plate Gary. I am a huge quac on meat fan and yours looks awesome. Care to share Recipe or brand?

Jim, just basic guac with garlic, lime, cilantro, salt, pepper, jalapeno. I usually add a chopped plum tomato, but forgot to pick one up.

Gary, i usually will not comment on posts without action photos, i love to see the Webers in use,
butt this solo shot your got is one of the FINEST plates I've seen AND, it has everything on it i LOVE!
 
Thanks Gary...I make similar, subbing red onion for the garlic. Weekend shopping list updated so I can make quac to accompany skirt steak.
