Nice beef ribs. I've never cooked those without foil becacause I was afraid of cooking time too long! Maybe this why I cook alway lower than you between 210/230 F.

Ask your local butcher to cut YOU some back ribs with some meat on the bones...
He'll be MORE than glad to do it (and probably cut himself some too!)
you'll probably pay 2 bucks a pound more than the 3.28 you did pay, but I guarantee you finer beefer ribs!
