Beef Short ribs and only beef short ribs...


 
Nice beef ribs. I've never cooked those without foil becacause I was afraid of cooking time too long! Maybe this why I cook alway lower than you between 210/230 F.
I guess you don't use water. right?

No water in the pan.
But I do use water often.
 
you got it going on california tony. nice slabs of beef. i have the steak and chop but im gonna try the chipotle based on your cooks/pics/feeback.

those are back ribs Tony, supermarket shiner back ribs... And You Did Justice To Them!
Ask your local butcher to cut YOU some back ribs with some meat on the bones...
He'll be MORE than glad to do it (and probably cut himself some too!)
you'll probably pay 2 bucks a pound more than the 3.28 you did pay, but I guarantee you finer beefer ribs!

Better yet....buy yourself a whole bone-in rib roast. Cut the meat off the bones to create a nice prime rib roast, and leave a nice healthy portion still attached to the bones that you can use for making beef ribs. Best ribs you'll ever eat.
