I smoked this a few days before Thanksgiving but never got around to posting it. I smoked it at 250* with some cherry chips on the Kettle using the snake method. When the internal temp hit 155* I foiled it in a pan with some beef rib bouilon until the internal temp hit 200*. Then sliced it. It was really good!
