Smoked up some simple peppered beef jerky on the WSM on Sunday. Forgot to take a smoke pic. Outta practice with the photo documenting. ;) Btw, it's yummy.

Temp and how long? Help a brotha out... :)

I was shooting for 140 degrees but it ranged from 140 to 170. Took me about 6 1/2 hours. I used flank steak cut into strips with the grain. Smoked with pecan chunks. This is my Uncle's secret recipe I've been trying to figure out for years. I grew up eating his venison jerky with this recipe which I think is the best flavor I've ever had.
 
Hey Nate.. Was taking another look at your post. Do you think your Uncle will eventually pass on the recipe, or will it "go down with the ship My ex-father in law used to have the most delicious grilled chicken recipe that I've ever tasted. It wasn't so much that he wouldn't give it to me, I just never really asked. There's always time to do that, right? Well, I didn't and I've regretted it for years. Like you, I've tried to duplicate it and probably got close, but no cigar. Funny, what we think of.
