Was in the mood to enjoy some pho this week so I whipped up the broth tonight so I can reheat a big bowl as we want.
4# brisket flat and a few pounds of beef bones.

Pulled the brisket out at 2 hours in on simmer so as to not overcook it.

The stock at the 2 hour mark. One more hour to go.

Hand sliced the slightly cooled brisket.
