BBQ'd buffalo short Ribs

Got these a while back for free, first time we had buffalo.

seasoned them up with Three Little Pigs Memphis style

Gave them a little sauce after a hour or so.

Into the old crock pot with Debs BBQ sauce.
Let them cook for 2 1/2 more hours.

Ribs had good flavor, no wild taste. A little on the tough side.
They needed more cook time. Will make "dovers" tomorrow and let them cook more.

Yeah, they like 200 degrees internal before they give up the toughness. Like the idea of putting them in the crockpot with Buffalo sauce. Might have to give that a try
 
Looks good Russ. My wife and I were out last night at a nice restaurant, and I ended up with bison strip loin. It was very good ! Bison is a really nice meat. It is lean, (not as lean as elk) and not gamey.
