I make a good pie but I’m still using parchment paper as a crutch.
I like to have my pies built and kitchen clean prior to guests coming over.
For me it makes hosting easier so I stack pies on parchment on top of cheap pans.
I use the cheap pans just for logistics.
My pies go on my CI disc with parchment for a couple of minutes then I slide the paper out.
It’s funky but I no longer have any headaches with a sticky peel or table.
I use both my oven and my Weber kettle but the Weber kettle is hands down the best way hereView attachment 107872
