I decided to try something new out. I know bacon-wrapped chicken isn't new, but what I stuffed it with was the difference.
Started with a little peso in the middle
Added pepperoni, cheese, and a sliced jalapeno
Bacon wrapped, it definitely helped keep everything together

I liked this dish, the stuffing made the difference. It was a little spicy like I like it. The pepperoni might as well not have been in there. I never tasted it at all. I ended up dipping some of it in BBQ sauce, but that's just me.
