I saw this recipe on Facebook and decided to give it a shot. The main variation from the posted recipe and what I did
was I baked the potato on the Weber Performer, added green onion to the mixture and used Colby/Monterrey Jack
instead of the cheddar. I used what I had on hand.
Here are the ingredients for tonight’s dinner. My wife is currently in Atlanta and won’t be back until tomorrow so it is
dinner for one tonight.

The potato sitting on his throne getting cooked! I coated it with EEOO and then hit it with seasoning salt. I am using
the Grill Dome half rack to cook the potato directly over the fire.

The kielbasa was seasoned with Penzeys Northwest Fire.

Potato out of the foil and cooling down.

Potato is filled back up and ready to go back onto the Performer with the kielbasa.

Back onto the Performer, indirect.

Potato and kielbasa are done!

Here’s your plate. I am saving the other half of the potato, plus some kielbasa for lunch tomorrow.
