Bacon Avocado Chicken Sandwich and Kale Soup

This is becoming one of my favorite meals and really easy to make. Pounded out a couple of BSCBs, cut them in half and seasoned with some Weber's Kickin' Chicken.


Toasted up some multi grain Ciabatta buns


My sandwich. Spicy mayo, mustard, half an avocado, lettuce, tomato and a lot of bacon.


and served with a bowl of Sausage Kale soup I had made earlier in the day
 
Looks great John! I'll have to try the Kale soup..mind sharing the recipe? I use Kale in my Breville juicer along with Celery, apples, ginger root, garlic, carrots and Broccoli excellent drink. Kale is great for ya'..thanks for sharing
 
Kale Soup.

two large carrots, 4 ribs celery, one large onion all finely diced up.
In a skillet brown and drain one package of sausage. I used hot Italian sausage.
In a large stock pot I heated some oil, added the diced veggies and some chicken base and sweat the veggies.
Once veggies were softened I added the sausage t the pot and filled the pot 3/4 full with water. Around 3 quarts I'm guessing.
Once pot was simmering I added two bunches of kale that had the ribs removed and torn into bite sized pieces and simmered for another 30 minutes or so until the kale was soft. Added some black pepper, sage, thyme and ground cumin to taste.
 
Ah yes yummy on a bun! Great looking soup John and healthy too, I need the healthy part because what I've been eating during the playoffs is anything but. My talking scale is starting to say “one at a time please”
 
Love sandwiches with chicken, avocado and bacon. Also instead of mayo you can mash the avocado into a paste and spread it on in place of mayo. Much healthier and tastes better in my opinion.

I'm just not a mayo person. Never liked the taste.
 
John what a great looking sandwich & that Kale soup look's excellent... Remind's me of the soup my grandma made for us when we where growing up.
 
That looks really tasty! I love grilled chicken sandwiches and the kale soup must go great with it.
