We have the middle girl home from school / summer job for a few weeks before she leaves for Europe to study abroad for 6 months. This girl is the one that appreciates fine food and BBQing unlike her sisters so I thought we would do some baby backs.

For the first time I prepared a soak for the ribs, mostly apple juice, minced onion, cinnamon, and cider vinegar. Here is a picture of the ribs after soaking for 24 hours.

I prepared a seasoning for a rub

I put them on the WSM with water in the pan and 3 chunks of apple wood. Leaving some room up top for some ABTs....man I love ABTs.

The WSM was holding steady at 215 and after an hour I added the ABTs. The plan was to go another 2 hours on the ribs for a total of 3 hours, eat dinner and make it to church.

Dang it! Ribs aren't even close to being done, they could probably cook for another hour. Last time I cooked BB I over cooked them. So I fired up the gasser and threw the ribs on the gas.

The ribs tasted good but were tough, hence undercooked. My Sweetheart scored them an 8.5 which I thought was way too high. Oh well, I'll get them right next time.

At least the look good and your family enjoyed them!!! I'm sure they were a lot better than you gave yourself credit for too!!

Timing a cook for a certain time to eat is hard for me, I mess the timing all up!
 
As long as you learn something from each cook James and you have good times with your friends and family you done good. Still looks like a nice meal to me.
 
Plate looks delicious! Going by time is really hard. 3 hours, unless you wrap, is usually not enough
for babybacks, especially at that low temp.

why did you try to finish them on the gas grill instead of the WSM?

Jim....the girls belong to my sweetheart. I didn't have time to finish them on the WSM, everyone was hungry.
