Baby Back Ribs with Bacon Wrapped Squash and ABT’s

One rack of Baby Back ribs seasoned with Sweet Rub O Mine.


I am using the Performer today with Lump Charcoal in a semi snake with cherry and pecan wood chunks.


The sides for tonight are Baby Yellow Dutch Potatoes, zucchini and yellow squash wrapped in
bacon and ABT’s.


Potatoes put onto the Performer. Ribs have been on for 3.5 hours now and getting closer.


Ribs are done. Glazed with some homemade BBQ sauce about 10 minutes before removing. Total
cook time for the ribs was 4.5 hours.

This was probably the best Baby Back ribs I have cooked. Perfectly tender with a little chew.
Definitely not fall off the bone ribs. The sides were also very delicious. If you haven’t tried wrapping
squash in bacon I highly recommend it.

Mike, now that I think about it. I had this rub in my hands today at Lowes. Looks like I'll be headed back soon to get some. I thought that label looked mighty familiar.

My garden is just about to start generating excess squash and zukes. This bacon wrapping and grilling will be happening here!!
 
Great looking rib dinner! It has never crossed my mind to wrap squash with bacon, sounds like a great idea though.
 
Looks like some mighty fine eating, Mike! I'll have to try the cherry/pecan wood combo some time.
Great with pork or chicken. I love pecan wood just by its self too. Very nice lookin ribs Mike! did you foil the ribs at all? or just go with out the whole time?
 
I personally love the Sweet Rub O Mine. I got it at lowes and loved it. As for the bacon wrapped squash I will be giving that a shot in the near future. It just goes to show you can't have a bad meal if it has bacon. As Jim Gaffigan says. "Bippity boppity BACON!"
