Going on

1/2 hour in, time for the flip and first mop (Apple Juice, Brown Sugar & Worcestershire Sauce)

One hour, flipping back right side up (no more flipping planned)

To be continued at the 1.5 hour mark

1.5 hours, starting to see a hint of pull back on the bone, I figure they will go into the parchment paper at the 2 hour mark, I'll increase the heat from 250 to 275 while in the paper, I would guess less than an hour in the paper, before coming back out for the Stubbs Sweet Heat final cook

2 hours, decided to flip them because the slow and go is pretty going slow, LOL

2.5 hours, I put them in the paper and I cranked the heat up, shooting for 275 in the paper, been running at 250

I didn't snap a photo of them wrapped, but I did take a moment so what my kid is up to
