Babies On The Performer

Went to use the 22" WSM this afternoon and I don't know what happened, must have been from a storm we had a week or two ago, but the bottom of the WSM was partially filled with water and the inside was getting a little funky. Used some Simple Green to scrub out the inside and then did a high heat burn with a full basket.

Had to go to plan B and do the rack of BB's on the performer. Turned out quite nice. And even got to tell the wife, "see that's why I have multiple grills/options!" Haha

that's a typical problem with the WSM - a design flaw IMHO. I've thought about drilling a small 1/8" hold in the bottom section to prevent it but.... You'll see people store their cookers with the center section upside-down which prevents this. Anyway, nice rack!

Ribs look great, nice back up plan. Because of that problem and with our monsoons here I always keep my WSM covered.

Very nice looking ribs. You can never have too many grills/smokers. I'm sure the SWMBO may not always agree. In this case she has no choice but to agree!

Get looking ribs and it's always nice to have a back up.;) That's why we have 9 BBQ's just for that reason. Ha Ha No it's Rich can't pass up a good deal!!

I like ribs on my Performer with a SNS for ribs better than my WSM. It's nice to flip them over the high heat for 5 min/side to really caramelize the sauce.
