Did an non-chocolate based mole dish this weekend:

Roasted up some veggies: tomatillos, serranos, onions and garlic on the gasser....​

softened the dried chilies and blended with roasted ones - adding cilantro and a little masa:

get things fired up:

Sear the chicken thighs:

Cook the shrooms:

reduce / cook the sauce a bit:

once the sauce was cooked, we threw the mushrooms and chicken in - covered and let cook for another 40 minutes... Meanwhile, we manufactured some tortillas:

Pulled the pot and done:

served over a bed of spinach. Rice would of worked nicely too, I think.....

I was looking at making up a batch of Chile Colorado sauce in the next few days, but may have to change gears to some mole!

That looks awesome.
All that snow and hot coals reminds me of the Nepal scene from Raiders of the Lost Ark, where Indy returns to Marion’s bar.
