It is a great weekend at my house, #4 just returned from a semester abroad in Spain where she did superb. She brought something home for her Dad, a tile made in Seville ( Here lives a Baker ), so in her honor I lived up to her gift and made her some Tartine Bread and a nice dinner. She wanted a good Hamburger and I added a my take on a Ree Drummond recipe for Tortia Soup.
The fixins for the soup, the spices are Chili Powder, Cumin, Garlic Powder and Kosher. Half goes in the soup, the other half goes on the Shrimp with a shot of EVOO and a shot of Tequila.
Into the CI goes diced red pepper, diced yellow onion, and two Jalapeno's seeded and diced in some EVOO until soft. Then a container of Chicken or Vegetable broth, some water, a couple of shots of Tequila and spices and diced garlic.
Black Beans, Corn , a can of diced tomatoes and a can of tomato paste added, then four tablespoons of Masa mixed with some water to flow is added to thicken the soup and add that earthy corn flavor
Shrimp on the Genny, then the Burgers which were seasoned through out with Montreal Steak and a slice of white American
A few Corn Taco's sliced into strips and added to the soup just before serving as were the shrimp and a splash of Cilantro along with the Burgers were a big hit with #4
So to all the Mothers on this board happy Mother's Day to you. I'm preparing a breakfast as we speak for my CEO with our recently made Bacon which came out superb and some Scrambled Eggs and Tartine Toast.
