We've been craving ribs for a while so today was a perfect day to get after it.
Mustard and homemade rub on two racks of St. Louis Spares.
Almost broke out the big WSM but with the wind decided to do them on the kettle.
Ribs on with racks for a long cook.
I can't put into words how much I love fiddling with the vents and hovering over the grill to get the perfect temp. I just love cooking on weber equipment.
At three hours turned the ribs around and upside down. Fully intended to spray with apple juice at this point. But I did not properly pre trip my equipment and my little 99 cent spray bottle gave up the ghost.
At the five and a half hour mark I put some sauce on the ribs. We are streaky on sauces but our go to sauce for the last couple of months has been from page 152 from Weber's New Real Grilling. Sauce was prepared excellently by my beautiful wife and cooking partner Kim. Also welcome to Daylight Savings! Already under the halogens.
After about 20 minutes, ready to pull.
Plated with Kim's potato salad, Bush's grilling beans and my daughter's cornbread.
The ribs were wonderful. And Kim's potato salad is divine. It was a great meal. Thanks for looking and have a great week everyone!
