Anticuchos - Peruvian Beef Kebabs

TVWBB Diamond Member
Trimmed & sliced a 2" thick top loin steak into 1/4" x 3" pieces.
Marinated for 3 hours in a mix of toasted garlic, toasted & ground cumin, aji panca paste, red wine vinegar, achiote oil, K salt & black pepper.

Grilled 4 minutes per side over a hot fire of lump & mesquite. Basted with achiote oil at 3 minutes per side.

Served with a yellow chile (aji amarillo) peanut sauce, steamers, & snackmatoes.

Time To Eat!

Damn good.

fwiw - recipe says to use beef hearts to be authentic. Not us.
Also, a little less cumin next time.

Thanks for sharing Robert, it looks great. My wife is from Peru, we have aji paste in our fridge, going to have to give these a try.
 
OK........That's the nicest plate I've seen in a long time. Looks delicious, my mouth is watering and I'm going to give your recipe a try. I'm a cumin freak so I might leave it as is. A full tablespoon is kind of daunting but I'm a slow learner. :D BTW.. I'm with you on the beef hearts.

Thanks, Cliff. I'm sure you will enjoy the kebabs.

Had to order the aji panca paste from Amazon. Several local Mexican supermarkets have the aji amarillo paste on the shelves. It's also available from Amazon.

The recipe calls for using a food processor to blend the ingredients. I hate cleaning those. I used a molcajete. Don't mind cleaning a blender, though.

The sauce is better if made a day in advance.

A friends father, who was stationed in South America for extended periods when my friend was a kid, used to make anitcuchos with beef heart, some people just went “ewww” but, not me! Those were one of the most incredible things I have ever had! I know my buddies dad is declining but, I wonder if he can recall the recipe he used. Talk about a blast from the past! We used to have a lot of fun out at their house!
