Simple dinner last night,
Texas Twinkies

and appetizers are ready (should have made more)

The pork was really moist, perfect picnic table weather so, it was a delightful day!

The rack of pork looks great Tim (do you go by Tim, or Timothy?)! One of my favorite things about Easter and New Year's is they always show up at CostCo! I'm also a fan of the cherry tomato/mini mozzarella balls caprese! So much easier than slicing everything!

I respond to darned near anything.
I cheated big time on the salad, both were literally just dropped in a bowl, these were Galbani marinated mozzarella balls and a big tub of grape tomatoes, the kids like my hand made version but, this was very well received!

Thanks everyone, I’m lucky to have the kids here every week! Granddaughter is in college at WMU and is extremely busy with her education but, has always made the time to come for the “Family Dinner” we started when she was maybe 6? Yeah, it can be a lot of work but, the time with them is well worth it! Might do a Brisket next week if it doesn’t snow!
