I have to admit I have never made (or eaten) a kettle pizza before. I know... I may be the person that hasn’t. What makes them so good? Is there a certain kind of dough you buy or make? How hard is it to do without the pizza kettle window? Anyone have success cooking them on the 22” kettle grate or on a Hunsaker griddle? What advice do you have for me to get “in the game”?
 
I haven't tried it on a kettle, but I use to have a pellet grill that made amazing pizza! Now it looks like I'm dropping some cash on this for my Performer. I guess I can justify it, I got the Performer free right before the trash truck did.

For dough, I always went to the local mom and pops pizza joint and bought dough balls from them, however if you are around a Wegmans they have pretty good pizza dough.

I used to make them on a pizza stone on the performer, and they turned out similar to the Kettle Pizza set up. I received the KP from my brother in law after he built his pizza oven. Not sure I would have bought one on my own, but it’s fun to mess around with. As for the dough, I usually buy 1 lb balls from Trader Joe’s or Mariano’s here in the Midwest. I would suggest starting with a pizza stone and see what you think. My brother in law sure got hooked on it!
