Aloha Moinks


 
I did these for a family party tomorrow, but had to do some...uh...quality control. The pineapple really keeps the insides from drying out, which has been my problem with moinks in the past.
 
And today I discovered another great thing about moinks (as if we need another): the bacon grease prevents the BBQ sauce from baking onto the cooking grate. I literally just wiped it down with a few paper towels to clean it!

Also, these will make a great app for my son's birthday party (in June). He's requested a luau theme, so I'm on the hunt for a good Hawaiian-style Pulled Pork recipe. Unfortunately, the boss won't allow me to do a traditional pit-in-the-ground pig roast.
