All Night Brisket


 
Wow temp here is 32. Really affected my burn time. Got 12 hours on a full load on the 22. Added a full chimney & got 2 more hours. Still need 2-3 more hours cook time. First time ever I just put it in the oven. I'm sure it'll be fine.
 
Overnighters are bad enough but when it's cold and windy not going to happen here. As in 22* and 18-20 mph winds I think my 18 WSM would only go about 5-6 hours. I'm interested how it comes out using the oven, if you can notice a big difference with a partial smoke.
