All Aboard the Gai Yang Train

GMarnech cooked up some fantastic chicken the other day and I thought I would try it on some chicken thighs. Very tasty stuff. Looks like some others are cooking it too. We might have to take it a throw-down in the "Challenge Pit". I also grilled some mango/jalapeno chicken sausage, sweet potatoes and some romaine.

The Gai Yang looks spot on. Where's the dipping sauce?
Those Thai bird chili peppers are something else. You have to try them. Hehe....

Yes Robert, I heard that I really missed out on the dipping sauce.
Nuclear, in a good way, right?
 
Great job on that cook Pat. When I read the recipe that was linked in Robert's post, the dipping sauce is what caught my eye.
 
Looks really good Pat. Heat level my be a bit much for me but I might give it a try.

Rich, I think if you cut the white pepper in half when you marinate it, you should be OK. I always taste my marinades(I like to have a small shot of worcestershire too) and this one had a little kick from the pepper.
I did not make the dipping sauce, sounds like I missed out. I think you could tone the sauce down by using very little chili pepper.
