I apologize that it's not a weber cook. It got windy here and didn't want dirt or debris on my cook.
This meal is one my mother would make often for us. There were tough times back in the 80s when I was growing up.
This dish is called enfrijoladas.
We start with 1 lb of pinto beans, 1/4 onion, 2 garlic cloves, and 2 tbs of oil. Bring them to a boil then put them in low heat for about 2-3 hours. Check at the 2 hour mark if done... If not check every 15 min.
When done put half in a blender and purée.
Get your CI with oil and dip the tortillas enough time to warm them.
Then dip them in the bean purée and roll them like enchiladas
This was topped with cheese and chopped onion with sour cream and salsa. For a side was a soup called fideo.
