A very humble meal....

I apologize that it's not a weber cook. It got windy here and didn't want dirt or debris on my cook.
This meal is one my mother would make often for us. There were tough times back in the 80s when I was growing up.

This dish is called enfrijoladas.

We start with 1 lb of pinto beans, 1/4 onion, 2 garlic cloves, and 2 tbs of oil. Bring them to a boil then put them in low heat for about 2-3 hours. Check at the 2 hour mark if done... If not check every 15 min.

When done put half in a blender and purée.

Get your CI with oil and dip the tortillas enough time to warm them.

Then dip them in the bean purée and roll them like enchiladas

This was topped with cheese and chopped onion with sour cream and salsa. For a side was a soup called fideo.

looks good to me! I like the inside-out aspect and being from Tx, I know how good fideo can be ;)
and nothing wrong w/humble. some great food comes from making do. I remember gravy sandwiches. not much of a sandwich, pretty much just some bread covered in gravy. stretched the dollar and tasted good. also, peanut butter and syrup sandwiches. thin coat of peanut butter on a single slice of bread, then a drizzle of kayro(dark or light) syrup. fold up and eat like a taco.

Heck you could put that puree stuff in one of those Slurpee machines at 7-11 and I'd be game for that!

Tony thanks for sharing that meal, every generation and every nationality has their version of cooks like this. Again Thank You, it looks superb, and very delicious. Your Mom's took good care of you as did mine

Nice looking meal!!! My Wife makes that soup once in a while but I have never seen your bean puree meal before. Do you ever put anything inside the tortilla? I'll bet some cheese or chicken would be good in there.

No we don't put anything inside......
That's a good idea... I don't recall my mother putting anything inside or Maribel.
 
We make the fideo too but alot less soupy. I reduce it down and spice it up so it looks almost like a spicey spaghetti.
Will have to try it your way one of these days....looks good
 
Thanks for sharing one of your childhood meals. I'm sure it brings back many happy memories when you make this.
 
Nothing wrong with this meal Tony. Yet that is simple and inexpensive, it must taste great. Memories of childhood are certainly coded here. And it is certainly the tastiest. Nice, dude;).
