A tale of two pork butts

I picked up a twin pack at Costco and brined both in salt water. I decided to use my usual Bad Byron's Butt Rub on one but decided to go to Jamie Purviance's book Weber Smoke for the second rub. I used his Quintessential Pulled Pork recipe rub.

Jamie Purviance's rub on the left, Bad Byron's on the right:



Started with a small chimney of KBB:



I decided to go with a bit of cherry smoke wood:



I got a bit of participation (if you have grandkids you know what that means) so I have to cover my pile of unlit and hide the iGrill on a specially placed nail under the table:





So... we're all settled in for a long winter's nap and should be ready late tonight for vac packing, a little snack, and lunch tomorrow.

Looks like a great start. Anxious for the results. Looking at your past posts, I am sure they will be great.
 
So, I finished up about 11 PM which put me at about 13.5 hrs cook time. It was a VERY easy cook -- the WSM performed it's usual magic with no babysitting involved. And there you have it:



Both butts pulled VERY easily. I let them cool in the fridge overnight and vac packed them this AM for use an an ingredient in other dishes. Of course those PP sammiches are on the menu for lunch today. :cool:



Oh...and at the initial taste test I think I still perfer the Bad Byron's.

Here's the 6 lbs headed for the freezer. I pulled out 2 lb for PP sammiches and had about 1/2 lb for the initial taste test/midnight snack.

Looks delicious as always. How did the Quintessential Pulled Pork recipe rub taste compared to the Bad Byron's?

Good looking pork Dwain! What's the taste difference between the two rubs. I haven't tried either.

Both were were very good. The Bad Byron's is spicier and the Quintessential Pulled Pork recipe rub is sweeter. I preferred the Bad Byron's in the initial taste test.

I'm getting ready to do the same and was going to try the Quintessential Pulled Pork recipe rub so it's good to hear you say you liked it. Great looking PP!
