a different take on ABTs

I've really been enjoying the cookbooks from America's Test Kitchen - this latest is from "The Best Mexican Recipes"

It called for 2 shallots, I used 1/4 onion, it called for panko, I used flamin' hot chee toes (lol my cousin bought for ski lunch today)...that's why it's pink - I think it'd be good with shrimp too though... 8 oz cheese, 4 oz cream cheese,

Shallots are really good kind of like a cross between garlic and an onion.

and those ABT variants look outstanding.
 
Leftovers with some pasta - 16 oz jar Ragu Classic Alfredo w/ lots of granulated garlic, salt, a little woosty sauce, 3 cans chopped clams, dehydrated onion........

I've never bragged about my white sauces before---but this was pretty good.
