88lbs of butt is schmokin

I sent out an e-mail to some regular customers at work to see if anyone wanted pulled pork. This is gonna be my new thing, instead of asking what they want and I end up cooking 10 different things, I'm gonna cook pork one week, brisket one week, etc. I get overwhelmed around the Holidays when turkey orders come in, so this will help. I ended up getting 36 orders totaling 46lbs of pork, couple orders were received after I bought the pork, so I hope I end up with a better than normal 50% yield or I'll be cooking more butts this weekend.

Got these butts from Wegmans for $.99lb and the biggest butt was 9.34lbs and the smallest was 8.38lbs, so they were pretty good size. The biggest ones go on the bottom and the smaller ones were squeezed on the top. I've done 10 butts on 2 WSM's before, but never had 10 BIG butts.

Holey Moley Larry...that's a lot butt. Did you get them all on? Looks like you made it.

Also, is that a chestnut tree by your deck? If so, can that be used for smoking?

Yes, they all squeezed on, 5 per WSM and the winds are BLOWING!! No wind break and temps are 215º and 228º and the biggest butt on each one is at 135º and 132º, so they're coming along!

It's some sort of magnolia tree, not the beautiful ones with big waxy leaves on it, but some other kind. It blooms beautiful white flowers when it's cold out.....

Looks like you have everthing under control.

You never cease to amaze me with your cooking etc. on the WSM. How to cram a bushel into a peck, and also how to cook everything (just the way it should be), as well.

P.S. I'm going to send you a PM, nothing urgent or anything. Certainly don't neglect your cook for the PM. Just want to pick your brain a little if you don't mind.

Wow Larry you had to fire up the 2nd WSM for this cook eh? Can't wait to see all the finished pics of all those butts.
 
Larry, I've done six butts in a smoker. Three to a rack if you stand them on edge. Nice deal on the butts. Got a local food market that has a sale this weekend on butts $.79 per pound. Bought some for the ol' freezer.
 
I have six butts in the freezer, and thought that was enough to last me until cold weather gets here. Now I see that it's only enough for one cook.

I guess I'll have to find another sale some place (and mix up a batch of WRB).

Man it smells good outside!!!

Butts are at 183º and 181º......had a heck of a time with wind and temps today. Not sure if it was all wind or damp coals and wind, but I could not maintain temps today on my almost 'air tight' WSM......the one with leaks held better temps!!!!

Don't feel bad about that at all Larry, heck I drink MGD 64 and that is even lighter than Miller Lite. Heck when you have that much on the cooker to worry about and you want to enjoy a cold one, that's the only way to go. Usually when Larry R and I get together, we pretty much go through 3-4 18 packs before settling into the good stuff, but when it's all said and done we can actually remember what the heck we cooked or burnt that night.

wind is terrible in this part of VA too larry. just messin with the beer, i rarely drink beer and when i do it's michelob ultra.

Yes sir, thank goodness we don't get together every weekend like we used to. I'm too **** old for it anymore. My hangovers last two days now. Well I not that old, but after the drinking sometimes I sure feel old.
