Both WSM's are naturally aspirated, no Stoker or Guru, etc. I have sand in one pan and 2 fire bricks in one pan, I haven't used water in years. The foil is for easy clean up, once the cook is done, let the grease set up and remove the foil and throw away. Hope this helps!
