88lbs of butt is schmokin


 
Butts are done, vac packed and in the freezer. Sorry for the lack of pic's, I didn't get everything done until 10pm last night and cooked dinner and drank beer in the process. My daughter had friends over last night so I grilled up dogs for them and some ribeyes for me and my wife. By the time everything was done I was BEAT! I ended up with 40lbs of finished product, not counting the 2lb bag I dumped on the floor!

I understand about being tired. I did 105lbs (pre-cook) of butt on my 22 for a fundraiser at work this summer. I trained a couple of other people on the art of pulling but it still was a lot of work.
 
Holy cow Larry! That first picture looked like you had a full shoping cart when you went to check out at the store. I really wish I could of seen the finished picks on the smoker! That is amazing. Nice work Larry!
 
Very nice Larry. Just curious about one thing and that is between pulling and sealing in the bags, do you add a liquid? I ask because the pork in the bags looks so wet or is that just because it was cooked to the point of perfect moistness?

Just don't tell us Canadians how cheap that beer was or we might cry!! haha I picked up a case (24) of the cheap stuff here today and paid $28!

On my trip last month to West VA I was like a kid in a candy store!! Although you guys need to work on Geography... the poor girls in the grocery store in Morgantown looked at my ID and said "ON-TAR-EE-O......is that a state??" No kidding!! I almost died laughing! Then I had the obligatory "is it cold up there" comments... to which I replied "its only 7 hrs away!!"

Vince, sorry there weren't any finished pic's on the cooker but here are two past cooks with 75lbs of pork with more pic's that I did a while back. 75lbs of pork and another 75lbs of pork.

I debated blowing her mind and speaking what little french I know... but i'm sure i would have got "are you speakin' mexican??" haha

Don't get me wrong... we had a blast on our trip and the people were some of the nicest I've ever met.

Oh and if you REALLY want to see highway robbery.. try buying canned beer up here. A 24 of "name brand" beer (Bud, Labatt Blue, Canadian, etc) will easily run you $40. I think that Bud Lite Lime is **** near $45.
 
Thanks Larry. Your stuff always looks so good. I'm going to attemp a London Broil today with a homebrew marinade from the frig! Basically a bunch of stuff mixed together consisting of a beef marinade, italian dressing, red wine, whorcestershire, and soy sauce. I posted a thread in the request section and did not get much of a reply. Figured I would wing it! I to would like to get some info on what you use on your butts! Vince B

Man it smells good outside!!!

Butts are at 183º and 181º......had a heck of a time with wind and temps today. Not sure if it was all wind or damp coals and wind, but I could not maintain temps today on my almost 'air tight' WSM......the one with leaks held better temps!!!!

Hi Larry - Looks great.....Do you use a stoker or some type of control system or just charcoal/lump and the vents? It looks like you have a foiled pan, do you just have a water pan foiled and no water?

I would like to do a cook like this for a party.....probably would only need half the butts though....
