$7.49/lb Prime Top Sirloin Caps from Costco.

First time seeing them at Costco.
I've cooked sirloin caps before, but they had the fat cap on, these do not.
AKA, Culotte steaks, or Picanha in Brazil.
When vac packing them for the freezer, one small one got sampled.

The package:



Lightly salted for about 30 minutes, dried well, cooked over lump with the basket on a tuna can.





Couldn't get a good focus with my cell, but you get the idea.



Tender as all get out, juicy, with big beef flavor, as expected from sirloin.
A couple of bites did have a very small piece of connective tissue, but the trade off is worth it.
For the price, I say give them a try if you can find them.
 
Looks great Bob! I spend a lot of time at the Costco meat coolers. Don't recall seeing these. You mentioned Culotte Steaks. I haven't heard that cut mentioned in years. I'll have to have a look-see the next time I'm in.
 
Never had that cut before, looks good. Although if I brought that up to Barb I know I would get. Do you want to put them in with the fifteen rib eyes or next to the ten T- bones in the freezer. Better not to go there.
 
Looks good Bob. We've even had those up here. Never seen those stocked anywhere before. Very tasty, we just grilled ours the usual way on the gasser. Each is a nice portion size if you don't want a big steak.
