45* = Rack of Ribs, Bloomin Onion, Fried Onions

After a long winter, and a fresh 7 inches of snow last thursday....Spring has finally arrived! Well, temps above 40* is like spring so I pulled a rack or ribs from the freezer last week waiting for saturday!

Squared them up.

Did 1/2 rack with a spicy rub or paprika, pepper, salt, sugar, brown sugar, chili pepper, cayenne, and garlic powder. Other 1/2 sweet with just brown sugar and a little pepper and Season All.

My best helper split some apple wood chunks with me, and we loaded up 2-1 snake method with apple and cherry wood.

8 lit coals and she held 225 every second of the cook.

Foiled the sweet rack (just for fun) with brown sugar and apple cider vinegar.

3 hours at 225 and 1 hour with sauce or foiled.

Did sweet rack with Sweet Baby Rays. Did other rack with my Brother-in-Laws homemade sauce. It's got some serious kick to it!

Plated with mac and cheese, a bloomin onion done on the grill (not my best) and some fried onion pedals.

Wife said these are the best I've ever made, and I agree. They were spot on tender with a good pull to them. Can't wait to start getting outside more and sharing more cooks! Happy Spring weather!

Luke great looking bones there and I'm sure the little guys fine handiwork was a major reason for your great success!
 
Good help....nice ribs, but where are the onions !!!!

On the plate I've got pieces of onion that were from the grill. Not my best, but brown sugar, season all, butter, and cooked about 45 minutes til soft.

Also fried some onion pedals in deep fryer. Smoked about 40 minutes, sprinkle with flour, dredge and fry. Delicious!
 
Great looking ribs Luke! I love apple on ribs, but haven't tried cherry yet. Have to give it a try.
