removed at an internal temp of 140ºF to rest... Super moist, Super Tasty!
served with baked Yukons and sautéed onions and Patty Pan squash

last week at the Wisconsin State Fair, we found this BBQ sign and lugged it home.

mounted it over the entrance to the P1G

back to the grill with a few sriracha burgers

some bacon...

then served on mushrooms, a slice of onion - burger with Provel cheese, the bacon and thick tomato
wax beans from the garden with zucchini on the side

then we took a coupla hens, brined 'em and halved 'em, seasoned 'em and grilled 'em

enjoyed another hometown brewski...

the hen halves were grilled indirect and direct until wonderful

served with oven roasted cauliflower and Hasselback taters with Melinda's pepper sauce and sour crème...

finally, yesterday pulled out the 22"WSM to rack up some ribs

minutes short of 5 hours at a very consistent temp inside the WSM of 227ºF

lots of fat on the beef ribs, but the meat, also plentiful, was sooo delicious!

Love that BBQ sign!!! Great job on all those bbq's . Went to State Fair also. ordered 3 Cream Puffs,received 6 in box! Guess how many Jeanette & I ate?.

Well Jim, you sure know how to fill up a week. Everything looks delicious. I really liked those pork chops and the Sriracha Burgers. Those pickles look great. Like to try making them some day. Interesting your sides on those last pic's were Yukons and Cauliflower. I'm doing a variation on both on my cook this afternoon.
 
Always great to look at your posts Jim - even the green G beers look good! As do all the meals, and the bbq sign looks great on the pigvillion. Thanks for sharing!
 
As always Jim, incredible pictures! Can't say I condone the Packers cup, but the brew that's in it is one of my favs ;)
 
Looks like you hit almost all of the food group hit parade, and very nicely done.

Is that BBQ sign going to stay shiny like a city bbq sign would be, or will it age to a nice rusty patina like a country bbq sign might do?

Bob, I was going to paint it but was talked out of it... it'll age well in the heat & cold & rain & snow...

No Paulie, last week at the Wisconsin State Fair, we found the BBQ sign, bought it and lugged it home. :)
 
Lotta good eats to be thrown at a guy at one time, I think I can handle it but wow, nice combo's there across the board. Love the Sriracha Burgers idea
 
All this bbq action makes me anxious to smoke something! Tomorrows I will smoke beef ribs and I hope mine will be awesome like yours.
Those halves are simply incredible!
 
Lots of good looking grub. My favorite is the pickles and beef ribs. I'd take a plate of just those and a beer of course.
 
I'm quite positive I gained a couple of pounds just looking at the pictures! Delicious.
