1st time Beef Ribs, cooling fast!

Hi all,
I have 4, 4 bone ribs on my WSM at 225. They have been on for 3 hours and already at 165 F. I planned on 8 hour smoke but cannot see it taking 5 hours to get to 203. Ideas?? Thank you
 
You will hit a stall which will likely drive you crazy, don’t worry about it. Remember, it’s barbecue and it will be ready when it’s done. Can’t rush it. If they get to temperature early, let the carryover heat break for ab To ten minutes then wrap in two layers of foil and over wrap that with a couple of towels and drop it in an empty cooler (I use an old Omaha Steak cooler).
They will hold in there for a couple of hours just fine.
Like I say, don’t worry about it. It’s always good to have a frosty beverage while waiting.

Thank you. I know that’s what I need to learn. It’s BBQ. Need to relax and just let it be what it is. But I have always worried about people enjoying the food when I cook. 9 am. Frosty beverage it is! 😀

Know the same feeling as cooking for the Wife, our Dog "Manchas" and I is much less stressful than BBQing for my relatives and friends.
